CHANGMAAL

Chagmaal is a tradition food from Jiroft, Kerman province. Kali dates and Sehen flour (Wheat Germ Flour) are the main ingredients of this tasty food.

How to prepare

Ingredients of Changmaal

Pitted Kali Dates | 10pcs 
Sehen Flour or bread crumbs | 2 cups 
Green or Black Cumin to taste 
Butter or Ghee as needed

Preparation

Step 1

Remove pits from Kali dates. Saute pitted dates in butter / ghee. Add green / black cumin to the dates at the same time.

Step 2

Saute Sehan flour/ bread crumbs and add to dates. Roast them for about 10 minutes.

Step 3

Then turn the heat off and let the pan rest for about 15 minutes to cool down.

Step 4

Smash the mixture well and make small balls with it.

Preparing this delicious snack takes only 30 minutes in total.

You can add some coriander or fenugreek seeds as you wish.

Changmaal is a great snack or meal for all ages especially kids and elderlies. You can take it for midnight supper or Iftar during Ramadan.

The reason for using Kali dates in this dish is because of the fleshy and soft texture of this type of dates as well as its moderate sweetness. They are also great sources of fiber, minerals and vitamins.

Traditional Kermani break called Kapoo can also be a good substitute for Sehen flour. In Jiroft, it is very popular to have Changmaal for dinner. If you are vegetarian or vegan, you can use margarine or vegetable oil to roast the dates.
